The menu consists of:
Smoked steak tartar with textured yolk, piparra and glass bread.
Salmon belly tartar with coconut ajoblanco, pickled cucumber and rice chips.
Croquettes of 100% Iberian acorn-fed ham with roasted bell pepper aioli.
Turbot with cauliflower puree and rosemary sour cherry ragout.
100% Iberian acorn-fed pork, marinated in Korean marinade, with mashed corn and roasted mini corn on the cob.
Crusted chocolate with Picual EVOO ice cream.
