In the ninth edition of Madrid Hotel Week, the KALMA restaurant pays tribute to one of the great emblems of Madrid cuisine: the cocido madrileño in two courses. Every Thursday, from 12:00 to 23:00, we propose a unique experience that begins with a traditional appetizer -a Gilda- and continues with the traditional ritual: first the soup, then the chickpeas and meats, served in individual clay pots.
Made with chickpeas from Pedrosillano and slowly cooked in a natural broth of beef, poultry, pork and vegetables, KALMA's cocido is distinguished by its deep and unctuous flavor. The recipe includes carrots, potatoes, chorizo, bacon, chicken, the traditional stew ball and the classic dressing of tomato, peppers and fresh onion, with cabbage on the side to maintain the purity of the whole.
More than a dish, it is an immersion in the memory and gastronomic culture of Madrid, combining tradition, authenticity and nutritional quality. This proposal is part of the autumn-winter menu of KALMA, a Mediterranean cuisine restaurant committed to seasonal products and proximity, and with a continuous service that brings the customer the essence of Madrid in every bite.
