We present our autumn snacks. Chocolate with churros, a careful selection of teas from family harvests, and a limited collection of five artisan cakes. Haute confectionery creations that celebrate the arrival of the new season, inspired by the most bucolic Madrid, with the signature of Mario Sandoval. Every afternoon from 16:30 to 19:30 in the Salón de Espejos and Haroma Restaurant. 

One of this year's protagonists, the roasted chestnut cake with marron glacé, connects with one of the most recognizable images of autumn in Madrid: the chestnut women, whose trade dates back to the eighteenth and nineteenth centuries. With their smoking braziers and blankets, these women were part of the urban landscape, until they became the protagonists of poems, paintings and theatrical scenes that reflected the daily life of the city. 

Today, that memory is transformed into a dessert that brings to the table the most endearing aromas of Madrid's autumn. The soft and earthy sweetness of the chestnut brings a discreet and mellow sweetness, while its creamy texture adds warmth in every bite. The combination with marron glacé enhances its elegant character, transforming a humble, everyday fruit into a haute patisserie proposal that awakens memory, tradition and sophistication at the same time.
